Designed to share and inspired by the robust flavours and spices of the Mediterranean rim, at Prince Dining Room humble vegetable and side dishes are heroes in equal measure to main plates.
Executive Chef Dan Hawkins and Head Chef Dan Cooper’s light, flavoursome menu is inspired by hyper-seasonal ingredients, always working at the peak of the seasons.
Sourced from local markets, the St Kilda Veg Out garden and a personally curated network of regional growers, producers and fishermen, the Dans select each ingredient with a predetermined purpose in mind, a seasonal value and a local significance.
Inspired by the glamour and grime of St Kilda and its eclectic history, Prince Dining Room is a light, bright space filled with custom interiors. The redesign respects both the Art Deco architecture of the building and the character of the local area without being too nostalgic of the venue’s past.
An elliptical blackened steel bar forms the centrepiece of the bar space while in the main dining room fibreglass partitions contrast with luxurious banquette sofas providing soft curvature inspired by the Art Deco era.
PDR is a beautiful but approachable space to enjoy exceptional food and drink.
